Hey, if you’re browsing the Interwebs, looking for ideas for Easter dessert, you might want to go check out this Dreamy White Chocolate Coconut Cream Pie recipe. I created it for the Davidson’s Safest Choice Pasteurized Egg blog. I think this would be perfect for Easter dessert, because it’s light (in texture, not calories) and coconut-y.
I’m embarrassed to say (Well, not really… ) I ate almost this whole pie by myself. It was so good! I kept it in the freezer and had a slice every night, all week. You’re allowed to eat two slices if you’re watching Mad Men.
I love coconut cream pie, how about you? I think it’s my second favorite pie. Blueberry always reigns supreme.
